I think I’ve said before on the blog that we try and plan our meals week by week so that we have a varied diet (ie not having rice or pasta every night as Mr B would love!) and don’t fall into having the same old boring meals each week. Having a Good Food magazine subscription and access to the internet for instant recipe inspiration definitely helps.
However, I’d love to know your favourite tips for making mid week meals fun (but also not too time or labour intensive) – do you have any favourites? And in this kind of ‘non-summer’ summer weather that we’re having, what kind of things do you eat – when it’s wet and rainy outside, I don’t know if salad night after night cuts the mustard….?
Looking forward to the weekend, as my parents in law are celebrating their 30th wedding anniversary, I said that I would make a cake. I think I’m going to go for this from Jamie Oliver’s website, as it looks a simple, but classic dessert.
I also have some buttermilk,which I saw in Tesco last week. There looks to be some exciting american style recipes out there which use buttermilk which I’d definitely like to try in future, but in the meantime, I’m going to make some lemon souffle cakes and then freeze them for when we want a nice dessert during a summer evening (whenever they arrive!).
And, last but not least, I’m going to try a different beef pie recipe at the weekend too with some homemade shortcrust pastry. It will be a busy time in the Barrie kitchen this week!
