To celebrate the Olympic sports currently gracing our screens, our most recent Lets Bake event had a distinctively global feel. We had cheesecake from Japan, kiwi cake and Lamingtons from New Zealand and Tres Leches (containing regular, evaporated and condensed milk) from Mexico, amongst others.
I took along a Tarta de Almendras (Spanish almond cake) which, as it happens was dairy and gluten free. (Although i did take a pot of creme fraiche along to accompany the cake which is obviously not dairy-free!)
Containing just almonds, sugar, eggs (7!) cinnamon and lemon zest, it’s easily a store cupboard bake. I got my recipe from the Clandestine Cake Club book but there are lots of recipes online too!
