Last Wednesday evening I had a bit of a baking frenzy in aid of a tea-break at work we were organising, ready for our big office move after Christmas.
I had volunteered to bake a couple of things, and I had a couple of ideas of what to make.
This Sticky Toffee Traybake went down a storm, and several people asked me for the recipe afterwards. As it’s from “Great British Bake Off: How to turn everyday bakes into showstoppers” and can’t be found anywhere online, I can’t publish it here, but I would recommend hunting a copy of the book down. It’s given me a foolproof way of making delicious caramel icing, which includes the addition of mascarpone cheese!
The sponge is so moist with the inclusion of chopped dates soaked in bicarbonate of soda and hot water, before being added to a muscovado sugar cake mix, but it’s still relatively lighter than a traditional sticky toffee pudding. It does include walnuts but I’m hoping to make a nut free version for Mr B to enjoy in the not-too distant future!
