… well this isn’t really the first salad of the year but it is the first salad to feature in my Cooking the Books series! From Leon: Family and Friends this is a Spinach, Halloumi, Asparagus and Chorizo salad. We added a couple of cheeky new potatoes to bulk it out a tad and the flavours were so complementary. The halloumi took on the oil from the chorizo, which also brought out the flavour of the salted chargrilled asparagus. Delicious!
