I had this recipe bookmarked for ages – I had big intentions to make lots of onion chutney to give away at Christmas presents. Then I got a full time job and any plans to be creative or spend any extended time in the kitchen went out of the window.
So when I noticed a few weeks ago that we had quite a lot of white onions (for what reason, I can’t remember!) I decided – now was the time to make chutney. I didn’t quite have the full quantity of onions, so I just halved the recipe and made two full jars. Like the recipe says, I can confirm that the chutney goes well with sausages, and also amazingly well heaped onto a nice slice of cheese on toast!
