Over the next couple of weeks I’ve got some winter warmer meals planned. These are a combination of speedy suppers and slow cooker creations I’ve found from around the web, library books on loan and other sources. Today I’m sharing a lovely little recipe which I spied when perusing the free Tesco magazine, which I often find is a good source of seasonal recipes to try.
After a post work, brisk dog walk along the fairy lit Ness Islands, there’s not much more comforting food to come home to than a plate of macaroni cheese!
This Tesco recipe for Green Mac ‘n’ Cheese is packed with green veg, making it comforting without being dense.
We made a huge tray of it, so we will be able to make it last two lunches each, as well as a hearty dinner serving for two.
Additional to the recipe, we also added in a handful of spinach that wouldn’t have been good in a salad, but worked well as it wilted in the cheese and pesto sauce.
