Whilst my macaroons were chilling nicely in the freezer on Tuesday night, I had some mashed potato left over so decided to make potato scones(also known as tattie scones in Scotland). These were so easy and I would definitely recommend them!
Season your mashed potato (I used 400g) and mix with 80g plain flour. Roll out so that the dough is 3mm deep and either cut into triangles or use a cutter.
Grease the pan with a little butter and fry on both sides until golden brown. Either eat as is now or later and top with butter or cheese (or as I like to, eat them plain).
