Yes, it’s well and truly autumn, my favourite season I think – the colours of the autumn leaves, fireworks, and of course my birthday! my marker for autumn is that this week we’ve had the heating on and I’ve had my chunky cardigan on at any opportunity. Unfortunately my beautiful slipper boots (bought about 4 years ago in Boston) have decided to disintegrate on the base so I’m now on the hunt for some uber-comfy patterned slipper boots. Anyway, I digress….
Autumn and Winter also equals Soup Season here in Chez Barrie. I LOVE making soup so thought I would share some tried and tested recipes on the blog over the next while.
Today I’m sharing Nigel Slater’s recipe for Butternut Squash soup. I haven’t made the accompanying crisps, but they look good too. I think that Nigel is one of my favourite TV chefs – though Mr B would despair if I served any of his suppers up as they rarely are accompanied with any carbs. Anyway, this recipe is a favourite with both of us. The smoky paprika really transforms it from being a bland but bright dish to a delicious, almost bar-be-quey smooth and sultry soup (Yes I did just use the word sultry to describe soup!). You can find the link to the recipe above and pictures are below, I didn’t make any alterations to the recipe.
